Daikon Salad

Ingredients:
2 medium (or 1 large) daikon (can also use turnips or kohlrabi)
1 medium apple
3 scallions
¼ onion (white or yellow)
Dressing Ingredients & Directions:
1 tablespoon garlic, minced
1 tablespoon green onions, thinly chopped
2 tablespoons anchovy / fish sauce
1 tablespoon sugar
4 teaspoons apple cider vinegar
¼–½ teaspoon red pepper flakes (optional)
Stir to combine before prepping the salad ingredients.
Directions:
Cut daikon into sticks about 2 inches long and ¼ inch thick.
Place daikon sticks in a strainer over a bowl.
Mix 5 pinches of sea salt into the daikon (to draw out moisture).
Let salted daikon sit for 10–20 minutes.
Chop the apple into sticks of similar size.
Thinly slice ¼ onion.
Squeeze excess water from the daikon and place it in a medium bowl.
Combine the daikon with onion slices, scallions, and apple.
Add the dressing and mix everything with your hands.
Let the salad sit for at least 10 minutes before serving.
Taste and adjust seasoning as needed.
Sprinkle with sesame seeds before serving.
Serve and enjoy!
Wonderful as a side with rice and meat, fish, or alternative proteins.
