Introduction
Gomen is a traditional Ethiopian dish featuring tender collard greens stir-fried with aromatic spices and served on injera or as a flavorful side. This simple recipe brings bold, savory flavor to your table with just a few ingredients.
Ingredients
2–3 bunches collard greens, chopped
⅓ cup minced red onions
1 Roma tomato, diced
1 yellow or orange bell pepper, seeded and diced
3 tbsp + 2 tsp olive oil
1 tbsp chopped garlic
Berbere spice mix
Salt to taste
Steps
Add chopped collard greens to a large pot and cover with water. Boil on medium-high heat for 30–40 minutes. Drain and set aside.
In a medium pan, sauté onions and tomato for about 5 minutes over medium heat, stirring occasionally. Add a splash of water if it gets too dry.
Add 3 tbsp olive oil, garlic, and bell peppers. Cook for 2 minutes.
Stir in the boiled collard greens and cook for 10 minutes.
Season with salt and continue cooking another 5–10 minutes.
Mix 1 tsp Berbere spice with 2 tsp olive oil and drizzle over gomen before serving.
