Italian Bean and Farro Soup

Introduction

This hearty Italian-inspired soup is loaded with beans, farro, and fresh vegetables, creating a comforting and nutritious meal. Perfect for cozy evenings, it’s rich in flavor, fiber, and plant-based protein.


Ingredients

  • 1 cup dry farro, rinsed

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 cloves garlic, minced

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 6 cups vegetable broth

  • 2 cups cooked white beans (cannellini or navy)

  • 1 can diced tomatoes (14 oz)

  • 1 bay leaf

  • Salt and pepper to taste

  • Fresh parsley for garnish



Steps

  1. In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery. Sauté 5–7 minutes until softened.

  2. Add garlic, thyme, and oregano. Cook for 1 minute until fragrant.

  3. Stir in farro, broth, beans, tomatoes, and bay leaf. Bring to a boil.

  4. Lower heat, cover, and simmer for 30–35 minutes, stirring occasionally, until farro is tender.

  5. Season with salt and pepper. Remove bay leaf before serving.

  6. Garnish with fresh parsley and enjoy with crusty bread.
