The Recipe!

Introduction

Robin Wheelright of Vivienne Kitchen & Pantry shares this crisp and colorful slaw recipe. Fresh kohlrabi pairs with carrots, asparagus tips, herbs, and a creamy yogurt dressing for a refreshing side dish.



Ingredients

  • 1 medium kohlrabi, julienned

  • 3 carrots, julienned

  • 2 scallions, chopped

  • ½ bunch asparagus tips, blanched

  • 3 sprigs mint, leaves only

  • 6 sprigs cilantro, leaves only


Dressing

  • 1 cup yogurt

  • ¼ cup sherry vinegar

  • ¼ cup olive oil

  • 2 tsp kosher salt, or more to taste

  • Optional: toasted sesame seeds, sesame oil, toasted nuts, Aleppo pepper, or chive flowers


Steps

  1. Combine all slaw ingredients in a large mixing bowl.

  2. In a small bowl, whisk together yogurt, vinegar, olive oil, and salt. Adjust to taste.

  3. Toss vegetables with dressing until well coated.

  4. Garnish with any optional toppings before serving.
