Robin Wheelright of Vivienne Kitchen & Pantry shares this crisp and colorful slaw recipe. Fresh kohlrabi pairs with carrots, asparagus tips, herbs, and a creamy yogurt dressing for a refreshing side dish.
Ingredients
1 medium kohlrabi, julienned
3 carrots, julienned
2 scallions, chopped
½ bunch asparagus tips, blanched
3 sprigs mint, leaves only
6 sprigs cilantro, leaves only
Dressing
1 cup yogurt
¼ cup sherry vinegar
¼ cup olive oil
2 tsp kosher salt, or more to taste
Optional: toasted sesame seeds, sesame oil, toasted nuts, Aleppo pepper, or chive flowers
Steps
Combine all slaw ingredients in a large mixing bowl.
In a small bowl, whisk together yogurt, vinegar, olive oil, and salt. Adjust to taste.
Toss vegetables with dressing until well coated.
Garnish with any optional toppings before serving.
