Introduction
Laura Bennett of Eloisa Organic Farm and The Vegucation Station shares this seasonal salad that balances the bitterness of radicchio with the sweetness of peaches and creamy Caesar dressing. It’s a versatile recipe that can be adapted for fall or winter with apples or pears.
Ingredients
Radicchio or other bitter chicory greens
Basil (substitute fennel or parsley in fall/winter)
Peaches (substitute apples or pears in cooler months)
Nuts (walnuts, hazelnuts, or others)
Cheese (sharp cheddar, parmesan, or similar)
Creamy dressing of choice (Caesar works well)
Croutons
Steps
Chop radicchio and toss in dressing. Let greens sit for a few minutes to tenderize.
Finely chop basil and add to dressed greens. Let sit again for flavor infusion.
Slice peaches or chosen fruit and set aside.
Roughly chop nuts and toast in a dry pan, along with croutons if making fresh.
Grate cheese. Assemble salad by tossing all ingredients together or layering fruit, cheese, and nuts on top just before serving.
