Introduction
This vibrant beet hummus is as delicious as it is beautiful. With roasted garlic, creamy tahini, and earthy beets, it makes a stunning dip or spread. Great with pita, crackers, or fresh veggies.
Ingredients
1 medium beet, roasted
½ cup tahini
1 head garlic, roasted
1 (15 oz) can chickpeas, drained and rinsed
1 lemon, juiced
2 tbsp olive oil
Salt to taste
Water as needed for blending
Steps
Roast beet until fork-tender and garlic until caramelized. Let cool.
Peel beet and squeeze roasted garlic from skins.
In a food processor, blend beet, garlic, tahini, chickpeas, lemon juice, and olive oil until smooth.
Add water gradually to reach desired consistency.
Season with salt to taste.
Serve chilled or at room temperature. Store in fridge for up to 5 days.
