Spaghetti Squash

The Recipe!

Introduction

This easy spaghetti squash dish is a lighter alternative to pasta, featuring tender roasted squash strands tossed with savory ground beef, sautéed peppers, and your favorite seasonings for a satisfying, wholesome meal.


Ingredients

  • 1 medium spaghetti squash

  • 1 lb ground beef (or turkey/chicken)

  • 2 bell peppers, sliced thin

  • 1 onion, sliced thin

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp Italian seasoning

  • ½ tsp chili flakes (optional)

  • Salt and pepper to taste

  • Fresh parsley or basil for garnish


Steps

  1. Preheat oven to 400°F. Halve spaghetti squash, scoop out seeds, drizzle with olive oil, salt, and pepper. Place cut-side down on baking sheet and roast for 35–40 minutes until tender.

  2. While squash roasts, heat oil in a pan. Cook ground beef, breaking it up until browned. Drain excess fat if needed.

  3. Add onion, peppers, and garlic. Sauté until softened, about 5–7 minutes.

  4. Stir in Italian seasoning, salt, and pepper. Cook another 2–3 minutes.

  5. Once squash is cooked, scrape flesh into spaghetti-like strands with a fork.

  6. Toss squash with beef and peppers. Garnish with parsley or basil before serving.
