Ingredients
Fresh spinach, washed and dried
Strawberries, sliced
Cucumbers, sliced
Queso fresco, crumbled
Pecans or walnuts, chopped (or pepitas)
Dressing
Olive oil
Lemon juice or red wine vinegar
Honey
Salt and black pepper
Balsamic reduction or pomegranate molasses for topping
Steps
Slice strawberries and cucumbers. Toss spinach in a large bowl.
Chop pecans and crumble queso fresco.
Whisk together olive oil, lemon juice or vinegar, honey, salt, and pepper. Toss spinach, strawberries, and cucumbers in dressing.
Plate salad and top with pecans, queso fresco, and a drizzle of balsamic reduction. Serve immediately.
