Introduction

A bright, simple salad featuring tender spring spinach, sweet strawberries, creamy queso fresco, crunchy pecans, and a tangy balsamic reduction. Quick to assemble, this salad captures the fresh flavors of spring.



Ingredients

  • Fresh spinach, washed and dried

  • Strawberries, sliced

  • Cucumbers, sliced

  • Queso fresco, crumbled

  • Pecans or walnuts, chopped (or pepitas)


Dressing

  • Olive oil

  • Lemon juice or red wine vinegar

  • Honey

  • Salt and black pepper

  • Balsamic reduction or pomegranate molasses for topping


Steps

  1. Slice strawberries and cucumbers. Toss spinach in a large bowl.

  2. Chop pecans and crumble queso fresco.

  3. Whisk together olive oil, lemon juice or vinegar, honey, salt, and pepper. Toss spinach, strawberries, and cucumbers in dressing.

  4. Plate salad and top with pecans, queso fresco, and a drizzle of balsamic reduction. Serve immediately.
