Introduction
This hearty, protein-packed soup combines Italian sausage, tender white beans, kale, and fresh herbs in a savory broth. It’s a wholesome meal perfect for cold days, served with crusty bread.
Ingredients
2 tbsp olive oil
1 lb mild Italian sausage
1 yellow onion, diced
2 celery stalks, diced
2 carrots, diced
3 cloves garlic, minced
3 cups cooked white beans, rinsed and drained
6 cups chicken broth
1 tsp salt
½ tsp pepper
2 tbsp chopped fresh rosemary
¼ cup chopped fresh parsley
3 cups kale, destemmed and cut into ribbons
Juice of 1 lemon
Grated parmesan for topping
Steps
In a large pot, heat olive oil over medium-high heat. Brown sausage, breaking it into small pieces. Remove and set aside.
In the same pot, cook onion, celery, and carrots for 4–5 minutes until softened. Add garlic and cook 1 minute.
Add white beans, salt, pepper, broth, and lemon juice. Simmer 10 minutes.
Return sausage to pot, stir in rosemary, parsley, and kale. Cook 10 more minutes.
Serve hot, topped with grated parmesan and fresh bread.
