Introduction
Katherine Deumling of Cook With What You Have and Nikki Guerrero of Hot Mama Salsa share this simple, flavorful spread made from grated zucchini, onion, herbs, and butter. Perfect on toast, in sandwiches, or tossed with pasta.
Ingredients
4–5 medium zucchini or summer squash, grated
¼ cup butter or olive oil (butter preferred)
½ medium onion, minced
2 tbsp chopped fresh oregano, mint, basil, or parsley
Salt and black pepper to taste
Squeeze of lemon juice or drizzle of vinegar
Steps
Grate zucchini and sprinkle with salt. Let sit a few minutes, then squeeze out excess liquid with hands or a towel.
In a deep skillet, heat butter or oil. Sauté onion 3 minutes over medium heat.
Add zucchini and a few pinches of salt. Cook over medium to medium-high heat, stirring frequently, for 15 minutes until soft and spreadable. Scrape up browned bits for flavor.
Stir in herbs, cook 1–2 more minutes, and finish with lemon juice or vinegar.
Serve warm or at room temperature on toast, in sandwiches, or over pasta.
