Join Native chef & fisherman Lukas Angus in an evening of cooking demos, storytelling and eating on November 9th at The Redd! This class is all about Indigenous Foods of the Northwest, with a special focus on salmon, a foundation of First Nation diets this region.
Lukas will show us from start to finish how to fillet and cook whole salmon. We will learn about other important First Foods and cook up some heirloom squash, sunchokes, and nettles with Michelle Week of Good Rain Farms. At the end, we will all get to taste freshly prepared locally caught salmon and beautiful farm veggies.
Lukas will also speak about the significance of salmon to native diets and the hurdles Native communities face in protecting the salmon population and the health of the rivers they rely on. We'll also learn how to get your hands on delicious native-caught salmon here in Portland! We are excited to learn about the foods that have sustained this region for millennia, why they must be protected and how to support Native producers. It will be delicious, we promise!
